Aug. 22nd, 2010 08:34 pmSpent another weekendish helping Beast's dad to empty his house. I tackled the kitchen while the chaps were in the garage. Cleared out some three thousand plastic bags—you think I'm exaggerating? Nope, it's an honest estimate, but could be way too low—and there were Bad Words when I discovered, within their midst, *four* rolls of bin bags. (Last time we were down for the weekend I had to require the mens to buy bin bags for the immense amount of rubbish we were generating.) Also threw out quantities of herbs, spices, sauces and sundry foodstuffs from, like, 1994, and relieved FIL of stuff he's never going to use (like those three unopened bottles of soy sauce).
And now, I have a question: what is your favourite recipe involving coconut milk. I have acquired three tins of the stuff. Hmm.

Date: 2010-08-22 08:25 pm (UTC)My favourite is probably this one. I also have a recipe of carrot soup with coconut milk somewhere. It's basically carrots simmered in some chicken or vegetable stock until they're completely tender when you mix them into a puree, add the coconut milk and some finely chopped onions that you've fried in red curry paste. Add some lime to taste and if you want sprinke some salted peanuts over when serving.

Then, before the veg start to brown, tip in a tin of cocunut milk, stir and simmer untill all the veg are tender. Serve with a squeeze of lime. I like this with rice.
