The definition of 'fantasy' being not necessarily 'it has elves and/or mages', but rather broader.
Oddly, although I've enjoyed fantasy novels for many years, I don't read and love a vast amount of Fantasy within popslash—and I've written at least two that would qualify as such. However, I think my choice for today's category fits the label, in that it is a world which doesn't now and never did exist.

nopseud. I was present as this story was conceived—indeed, I provided the, er, spark, although only by proxy, as I was bewailing the prompt I'd received for that year's MTYG (2009), which was 'post-apocalypse with vampires and romance'. I have to admit, the concept of vampires running a tea shop would not have occurred to me, but Nopseud was very excited about it, and the resultant story is atmospheric, convincing and highly readable.
There are a couple of follow-up stories, too: Providence and honesty.
Sadly, I put my response to this MTYG prompt (for this world to be unbroken) onto my list last year, so I won't use it here. Instead, have a more conventionally 'fantasy' world in Tribute, written for my own Dragon Challenge in 2008. In which there is a dragon in the sky, and someone has to be sacrificed.
