Last year I got a day cooking course with Macarons & More as my birthday present. Today, I made the salted caramel brownies again, all on my own! (Well, Beast came and held the sugar thermometer for a while. And cleaned various bowls. Very efficiently.) This included making caramel for the very first time - on the course, they had already made the caramel for us, probably because it takes ages! But it was really good.

We had some when it came out of the oven, with ice cream. You're jealous now, aren't you!

thanks for the offer, but realistically I'd likely not ever get around to making it (trying to make caramel kind of scares me)

It was time consuming but not as impossible as I'd feared it might be. I think I dreamed about it last night - filling little shells with chocolate and then pouring caramel into them, for delicious home-made goodness. I... may have to try this.

I'm quite impressed about that, too... it takes a long time, because after the sugar has melted, you add butter, cream and salt, and it all stiffens into mighty lumps, but much stirring and poking with a sugar thermometer and *eventually* there it is, yummy caramel!

Yes, I'm terribly jealous!! It sounds SO GOOD! (But now I'm going to eat some of the chocolate ice cream I made with my new ice cream maker this weekend. Sweet revenge ;-)

Ah, now, when you say chocolate ice cream I feel no jealousy, because for some reason I don't really care for it. Ice cream with chocolate chunks, of course, is quite another matter! I trust the ice cream maker does a good job?

I don't care for store-bought chocolate ice cream either but when it's home-made and flavoured with cinnamon it's very, very tasty indeed. The ice cream maker makes a very good job but it takes longer than I thought it would to get a firm texture. Or possibly I'm just impatient :-)
